Harvest date: 21/4 – 10/5 Brix: 22- 23 Fermentation: 100% stainless steel Alcohol: 10.4% Titratable Acidity: 8.8 g/l Residual Sugar: 35 g/l pH: 3.05 Cellar and Tasting Notes Premo Riesling is made from specific parcels within our Riesling block that have the intensity and acid profile to create a Spatlese style Riesling. Fined to crystal clarity prior to fermentation to capture the intense white peach aromas and citrus flavours. The wine was cool fermented in stainless steel using specific cultured yeast and the ferment was stopped with by chilling to zero degrees when the balance between sugar and acid was tasty. The resulting wine has a central core of tight focussed acidity supported by a luscious mid-palate. Further complexity in the form of subtle burnt matchstick aromas are derived from prolonged ageing on yeast lees and are natural sulphides adding another dimension to the wine. This wine will definitely benefit from 2 or 3 years of bottle age with the residual sugar and lower alcohol developing into a rich honeyed lucsiousness. |
