CELLAR NOTES

The vintage of 2007 provided Sauvignon blanc grapes in perfect condition. Our young block (4 years) was harvested first giving us some beautiful tropical flavours and aromas.

We then went into our old block (16 years), which takes a bit longer to ripen, looking for some classic herbaceous Sauvignon characters.

Three stainless steel tanks of clean juice were fermented in classic kiwi style, slow and cool (12 – 14oC), to retain purity of flavours & aromas.

The resulting wine is a true expression of Sauvignon Blanc - clean and focused backed up by crisp ripe acid and concentration.

TASTING NOTES

Opening with fresh pineapple flesh followed by refreshing limes & cut grass, this dry wine bursts in your mouth with salivating acidity & amazing concentration. Zesty lime cordial & grannysmith apple typify the mid palate of this racey Sauvignon Blanc, leading into a persistent dry tonic finish, which lingers with freshness.

Bottled with natural carbon dioxide retained after primary fermentation this wine is sealed under screw cap ensuring a fresh and lively wine.
