2006 RESERVE SAUVIGNON BLANC

WINEMAKER’S NOTES

The grapes are all grown on our famous Te Awanga stones – shingle. These grapes were hand picked 3 times at different brix level – from 21.5 to 23.5 brix over a period of 2.5 weeks. This is a much more rounded style and also very food friendly. Match with scallops or crayfish.

WINEMAKING INFORMATION

All the grapes were whole bunch pressed and the juice was then fermented in seasoned barriques at controlled temperatures with a 12% wild fermentation. A small portion was inoculated for malolactic fermentation and the wine was then aged for 11 months with weekly stirring of the lees.

We added 9% Semillon to this wine to produce a fuller bodied wine with extra complexity. This variety helps the ageing of this wine, fattening out the palate.

This wine exhibits ripe tropical flavours of passionfruit and pineapple with the spine of crisp apples. Over time the sauvignon characters disappear and the wine becomes very oily and viscous.
